From a selection of grapes in the fields, and a selection of musts in cellar.

Bright straw yellow with a light golden glare.

AGING

Primary fermentation in a thermoregulated steel tank, bottling taking place in the summer following the harvest, natural secondary fermentation on the lees, disgorging with low sugar content liqueur.

AROMAS

Suggestions of ripe exotic fruits and candied fruits, hints of citrus, almonds and honey; vanilla and aromatic herbs, buttery.

TASTE

Dry and harmonious, with hints of almonds and full-bodied evolving spices, elegant and complex, with a lingering aftertaste.

SUGGESTED PAIRINGS

Scallops au gratin. Dill-flavoured salmon carpaccio. Perch or seafood risottos. Gilthead in potato crust or baked in foil. Brandy-steamed king prawn. Steamed scampi.
