BLEND OF GRAPES

95% Chardonnay, 5% Pinot Blanc, guyots with 4,500 - 5,000 stumps per hectare. Yield lower than 9,500 kg of grapes per hectare, corresponding to approx. 4,500 litres of wine from first pressing.

COLOUR

Bright straw yellow with noticeable hints of gold.

ALCOHOL CONTENT

AGING

Primary fermentation in a thermoregulated steel tank, bottling taking place in the summer following the harvest; a light liqueur de tirage for secondary fermentation is chosen for a lower pressure on the lees, while disgorging takes place with a moderate sugar content liqueur.

AROMAS

Fruity with suggestions of white flowers, honey, almonds and citrus, vanilla, buttery.

TASTE

Well-balanced, typically creamy, crisp and dry with a pleasant touch of sapidity.

Battered frog legs with herbs. Franciacorta risotto with wild strawberries. Gnocchetti with scallops and shrimps in a pesto sauce. Sturgeon with home-grown vegetables. Orange-gratiné turbot. Steamed pike.
